Monday December 7, 2020 – I started off my morning with my advent calendar! For this day, I received two recipe cards. One of them is PHOEBE’S CHRISTMAS DESTINY SALAD & the second one is LITTLE DROPS OF HEAVEN HOLIDAY CANDY. I always wondered what the candies Monica made tasted like & well, maybe you have wondered that too! So here it is:
INGREDIENTS:
- 1/2 C (1 stick) butter, cut into pieces, plus more for the pan
- 1/2 C sugar
- 1 1/4 C goat milk
- 1 1/4 C heavy cream
- Flaky sea salt for sprinkling
STEPS:
- Set a large pot over high heat and add butter, sugar, goat milk, and heavy cream.
- Stir the mixture constantly while keeping the candy thermometer party submerged in it. When the temperature reaches 250 F, immediately remove the pot from the heat.
- Butter a baking sheet and spread the caramel over it. Sprinkle with sea salt and allow to set. Once cool, cover and refrigerate overnight until caramel becomes firm.
- Cut waxed paper into 2-by-2-inch squares.
- Using a wet knife, cut caramel squares and wrap each square in waxed paper. Twist the waxed paper on both ends to form candy wrappers.

I then made myself some breakfast and decided it was time to decorate my balcony. It was a bit challenging since I didn’t know if I would like they way they would look. I usually go with very specific Christmas looking lights. These lights have the classic lightbulb look to it, and since the lights are white and not colorful, I started to doubt if I’d like them. It was fun because I had to screw in each individual lightbulb & normally you don’t have to do that. I’m still considering adding colored lights to my balcony also.


I had to head out to work after hanging my lights. And after work, I had to go to Trader Joes to pick up some groceries and I found a Cocoa Peppermint Almond Creamer and let me tell you, it is absolutely delicious!!! I love how full of flavor it is and you can taste everything from the cocoa to the peppermint. It is perfect! As soon as I got home, even though it was later in the day I wanted to try it out. So I made myself a small cup of coffee. I ended the night by watching some youtube videos along side my cup of coffee.
